Sri Lankan wrap koththu
If you ever get a chance to visit Sri Lanka, I would say this is one of the main dishes to try out! traditional kottu roti is made with godamba roti; an oil dipped all flour roti cut to tiny little pieces with sauteed veggies, chicken or eggs. The noise of godamba roti cutting is heard when you go past a street vendor! Its music for us lankans! I cannot find godamba roti nor can I make it as it has to be dipped in soooo much oil overnight! Since this is a health and weight-loss recipe blog, I made my own healthier version as usual!
By using wraps instead of godamba roti, we are cutting some unwanted calories in this recipe.
As I always say, the seasonings and the ingredients I use are for my own palate. Please feet to adjust to your own liking when making my recipes.

Prep and cook time: 30 min approximately
INGREDIENTS
2 large whole wheat wraps
1 egg
1/3 cup spring onions
1/2 onion finely chopped
3 garlic cloves finely chopped
1/2 thumb-sized ginger chopped
1 green chilli
1/2 cup carrots grated or thinly sliced
1 tbsp chilli flakes ( more if you want it spicy)
1/2 tsp of curry powder
Salt to taste
4-5 tbsp of curry ( check my easy curry sauce recipe here)
Few sprays of oil
Green peas ( 1/4th cup optional )
Curry leaves
2 crushed cardamoms
METHOD
Cut the wheat wraps into thin slices as shown in the image set aside.
In a skillet, add few sprays of oil, add crushed garlic and ginger, green chilli along with chopped onions, karapincha or curry leaves and saute until onions are tender and lightly brown in colour.
Add all the seasonings ( including cardomoms) , carrots, leeks or spring onions and sautee until cooked. ( preferably in low heat while covered with a lid)
Once carrots are tender, move the vegetables to aside and add the beaten egg and scramble using a whisk to make small scramble pieces of egg. Mix with the vegetables and combine well.
Taste test. If you need more salt or chilli flakes this is the time to add them now.
Now add the cut wheat wrap pieces, mix well to combine while sauteeing the wraps along with the mixture. and finally, add the curry sauce ( about 3-4 tbsps ) and mix well!
