Sugar-free fluffy coconut pancakes
Some lovely person told me “ you cannot take coconut out of a Sri Lankan” ! which is so so true. I love coconut and I love these fluffy coconut pancakes even more!.
NOTES: if you want to make these sweet add 1/2 tbsp honey or coconut sugar. If you want to eat as a savoury you can add spices or eat as the below recipe.

Serving size: 2 medium pancakes
Prep and cook time: 10 min
INGREDIENTS
1/4th cup desiccated coconut
1/2 cup oat flour ( sifted)
1/2 tbsp baking powder
Pinch of salt
Egg
1 tbsp of thick yoghurt
METHOD
Whisk the egg and add baking powder and a pinch of salt. Now add the desiccated coconut and mix to combine. Finally, add the oat flour, yoghurt and mix to combine.
If you want the pancakes to be thin feel free to add liquids until you create the desired batter.
Simply add the batter using a tablespoon and make the pancakes as you would normally do.
When the pancake bubbles, its time to flip!
Once you flip, just cover for 30 seconds.
