Coffee chia pudding
love for chia pudding combined with my love for the coffee ! perfect combination I would say..

INGREDIENTS
1 cup of coconut milk or creamy almond milk
2 tsp of instant coffee
pinch of salt
2 tbsp of coconut sugar or any type of sugar or sweetener
3-4 tbsp of chia seeds ( depending on how thick you want it)
few drops of vanilla
METHOD
Put the milk in a milk pot, add coconut sugar, vanilla and pinch of salt and instant coffee
Bring it to a gentle boil while whisking the sugar and vanilla and coffee to dissolve
Now pour the mixture to a glass jar: taste test and add more coffee, sugar or vanilla if necessary
Add the chia seeds and screw the glass jar with a lid and shake until chia seeds are well combined with the coconut milk mixture.
Place the glass jar for 15 min to set the chia pudding.
