Mini-pancakes- low in carbs
Mini pancake trend is everywhere isn’t it? they look so cute and pearly , I just had to make them!
Serving size : 50 mini pancakes
Prep and cook time : 10-15 min
INGREDIENTS
1 cup oat flour ( approximately 1.5 oats blended and sifted)
1 egg beaten
1 tsp vanilla extract
1 tbsp greek yoghurt
1/3 tsp baking powder
2 tbsp of coconut sugar or any type of sweetener you use.
1/2 cup of milk ( we may not use all)
Pinch of salt
Squeeze bottle
METHOD
In a high-speed blender, put everything but only half the milk; blend to make a silky smooth batter. If you're not making mini pancakes, the batter should be thick enough to make regular sized pancakes, and you can stop right here.
However, since we are making mini pancakes, I would add the rest of the milk blend and sieve the mixture to get rid of the clumps. *This will help when squeezing the batter through a squeezable bottle.
Pour the batter to a squeezable bottle, heat the skillet, add drops of batter and continue making the mini pancakes as you would make regular pancakes ( make sure the sides are bubbling and then its time to flip)
Top with any topping and enjoy ! kid friendly for sure !
