These moist muffins are to die for. I love the coffee aroma which fills the room when I bake these. It just wakes my mind up like no other.
These have no added white sugars, unnecessary chemicals. Its filled with nutrients and good fats. You can eat them without any guilt. What else? well its a blender muffin so no fancy baking skills needed
Also, you can use them as your meal planning prep and refrigerate these muffins for up to one week. Just heat up for 20 seconds in the microwave or in the oven before you eat.
I always use the nutribullet , ill link the one I use over here βhttps://www.amazon.co.uk/NutriBullet-Pro-900-Blender-9-Piece/dp/B01N39HGLD/ref=sr_1_1?ie=UTF8&qid=1535729389&sr=8-1&keywords=nutribullet+900+series
1/2 cup of almond flour
2 large eggs
1/2 cup coconut sugar
1/3 cup crunchy peanut butter (natural, do not use the one with added sugar if you are concerned about your sugar content)
2.5 tbsp of cacao powder
3 tbsp of Nescafe granules ( instant)
1/4 cup sugar-free chocolate chips ( optional )
METHOD
Preheat the oven to 180c
Add all the ingredients in the blender except for the chocolate chips and blend it until it forms a coarse batter ( I love the crunch therefore, I donβt blend it to a smooth batter)
After the batter is made, add the chocolate chips and, mix it well.
Pour them into small muffin moulds or a muffin pan and bake it for 25 min at 180c.
