Coconut balls ( pol pani)

INGREDIENTS
1/2 cup oats blended to a fine texture
1/2 cup desiccated coconut
3 tbsp of set honey or coconut sugar or jaggery
Pinch of salt
1 egg
1 tsp of vanilla
METHOD
In a skillet, add coconut, salt , vanilla and honey; caramelise until the mixture changes colour to a golden colour ( do not let the honey burn).
In a small bowl, whisk the egg; add rest of the ingredients in and mix to combine.
If you own a dutch pancake pan, use that to make ball shaped pancake balls. If not, use a normal pancake to make mini pancakes!
