Coconut balls ( pol pani)

Coconut balls ( pol pani)

Serving size : 6 balls

Prep and cook time : 10 min

INGREDIENTS

  • 1/2 cup oats blended to a fine texture

  • 1/2 cup desiccated coconut

  • 3 tbsp of set honey or coconut sugar or jaggery

  • Pinch of salt

  • 1 egg

  • 1 tsp of vanilla

METHOD

  1. In a skillet, add coconut, salt , vanilla and honey; caramelise until the mixture changes colour to a golden colour ( do not let the honey burn).

  2. In a small bowl, whisk the egg; add rest of the ingredients in and mix to combine.

  3. If you own a dutch pancake pan, use that to make ball shaped pancake balls. If not, use a normal pancake to make mini pancakes!
