coffee pudding

Prep and cook time : 10 min- overnight in the fridge
I love coffee and I love coconut, so I thought let me put those together and come up with a easy pudding recipe!

INGREDIENTS
1 can of pure thick coconut milk
2-3 tbsp of coconut sugar or any type of sugar you prefer ( extra 2 tbsp for sprinkling)
3-4 tsp of vegan gelatine powder or whatever gelatine you have in hand
1 tsp vanilla bean paste.
1 tbsp of strong Nescafe or coffee ( if you want this pudding to taste a lot like coffee add more coffee)
Pinch of salt
METHOD
In a small saucepan, whisk together the coconut milk with the powdered gelatin. Allow to sit for 5 minutes to allow the gelatin to "bloom."
Add in the vanilla extract and the coffee then gently heat the mixture over medium heat, whisking well to help the gelatine dissolve; please do not let the mixture boil.
Once the gelatin has completely dissolved, remove from the heat and stir in the coconut sugar.
Now, whisk to combine everything and sieve the mixture to get rid of the lumps.
Add coconut sugar to the bottom of the moulds and pour the mixture into your desired moults or one big container; refrigerate overnight.
