Weight-loss friendly Rice-salad
Hi guys! I understand we all are facing a challenging time, and it's quite hard to get hold of a variety of food items and groceries. I was running out of fresh greens and had one or two half packets left, so I utilized them all to make this rice salad.
If you're bored eating the same thing over and over and if you can find some of the below ingredients, I highly recommend you make this. This is not only a weight-loss-friendly recipe, but it is also nutritious and keeps you satiated for a long time.

INGREDIENTS
1/2 cup raw brown rice ( substitutions- red rice, bulgar wheat, barley, white rice)
1 onion
1 cup of salad leaves
1 clove of garlic
1 cup of spinach
1 cup of salad leaves
1 cucumber, peeled and chopped
1 onion minced
1 tomato
1/2 cup of lentils of choice ( substitutions- chickpeas, green peas, cron, black eye beans, broad beans etc)
Lime juice
Pinch of salt
1 tsp cumin powder
1 tsp chilli powder
1 tsp fajita seasoning ( if you dont have it , do not worry)
Few sprays of olive oil.
METHOD
Add the raw brown rice or the red rice to the food processor and press the button once- this will break the rice to small pieces. Cook the rice and set aside.
In a skillet, add minced garlic, minced onion, seasonings and saute until onions are brown.
Add the lentils and mix with the onion mixture; taste test !
Add the rice to the lentil mixture and mix well.
Chop the salad leaves and spinach into small pieces and add the leaves to a bowl.
Chop the tomatoes and the cucumber add to the leaves bowl.
Finally, add the rice and lentil mixture to the leaves bowl add salt and lime juice and give it a good mix.
Enjoy this loaded and nutritious salad.
