Veggie packed salmon pie topped with cheese couscous

Instead of ordering a take-away, try this one out!. Its filled with nutrients and delicious! Excellent for a warm cozy day dinner !

Serving size : 2

Prep time -5 Min

Cook time - Approximately 30 min

Pre-heat oven to 180c

INGREDIENTS

  • 2 salmon fillets without skins ( approximately 200g)

  • 1 cup dry couscous

  • 1 cup green peas

  • 1 cup sweetcorn

  • 1/2 cup chopped broccoli

  • 1 cup of chopped green onions

  • 2 cups chicken stock

  • 4 tbsp shredded low fat cheese

  • 3 cloves of garlic minced

  • 1 tsp garlic powder

  • Salt and pepper

  • 1 tbsp of low fat butter or few sprays of olive oil

METHOD

  • Boil the chicken stock and add to the cup of couscous ; cover until the couscous cooks.

  • In a skillet, add few sprays of olive oil ( alternatively you can add butter if you like); sautΓ© green onions and garlic until green onions become slightly soft.

  • Add veggies and the salmon, seasonings and sautΓ© until veggies are soft and tender and the salmon is fully cooked.

  • Mix the cheese and the cooked couscous and set aside.

  • Now add the veggies and salmon mixture to a over-proof container and top with the cheesy couscous mixture.

  • Bake for 10-15 min until cheese is melted!
