Veggie packed salmon pie topped with cheese couscous
Instead of ordering a take-away, try this one out!. Its filled with nutrients and delicious! Excellent for a warm cozy day dinner !

Pre-heat oven to 180c
INGREDIENTS
2 salmon fillets without skins ( approximately 200g)
1 cup dry couscous
1 cup green peas
1 cup sweetcorn
1/2 cup chopped broccoli
1 cup of chopped green onions
2 cups chicken stock
4 tbsp shredded low fat cheese
3 cloves of garlic minced
1 tsp garlic powder
Salt and pepper
1 tbsp of low fat butter or few sprays of olive oil
METHOD
Boil the chicken stock and add to the cup of couscous ; cover until the couscous cooks.
In a skillet, add few sprays of olive oil ( alternatively you can add butter if you like); sautΓ© green onions and garlic until green onions become slightly soft.
Add veggies and the salmon, seasonings and sautΓ© until veggies are soft and tender and the salmon is fully cooked.
Mix the cheese and the cooked couscous and set aside.
Now add the veggies and salmon mixture to a over-proof container and top with the cheesy couscous mixture.
Bake for 10-15 min until cheese is melted!
