weight-loss friendly Vegan Spicy lentil soup
Extremely easy to put together soup you will ever come across! it’s filling and delicious.

INGREDIENTS
1/2 cup of red lentils washed
2 large tomatoes
2 green chillies
3 tbsp of thick coconut cream
3 cups of vegetable stock ( less if you want this thick)
Pinch of sea salt
Pepper to taste
Few sprays of olive oil
3 cloves of garlic crushed
METHOD
In a skillet, add few sprays of olive oil and add crushed garlic, onions and green chilli; sautee until onions turn colour.
Add red lentils , tomato, salt pepper and the vegetable stock.
Cove and cook on low heat until red lentils are cooked.
Add coconut cream and bring the soup to a boil. ( add more stock if you think its too thick)
Blend the soup to a creamy consistency!
