weight-loss friendly Vegan Spicy lentil soup

Extremely easy to put together soup you will ever come across! it’s filling and delicious.

Serving size: 2

Cook time : 20-25 min

INGREDIENTS

  • 1/2 cup of red lentils washed

  • 2 large tomatoes

  • 2 green chillies

  • 3 tbsp of thick coconut cream

  • 3 cups of vegetable stock ( less if you want this thick)

  • Pinch of sea salt

  • Pepper to taste

  • Few sprays of olive oil

  • 3 cloves of garlic crushed

METHOD

  1. In a skillet, add few sprays of olive oil and add crushed garlic, onions and green chilli; sautee until onions turn colour.

  2. Add red lentils , tomato, salt pepper and the vegetable stock.

  3. Cove and cook on low heat until red lentils are cooked.

  4. Add coconut cream and bring the soup to a boil. ( add more stock if you think its too thick)

  5. Blend the soup to a creamy consistency!
