Tandoori-style chicken ( stove top)

Are you looking for a easy chicken recipe to make for dinner? look no further ! this recipe is created to put to gather in matter of minutes and cooked on the stove top rather than grilling. Chicken is tender and filled with different flavours which comes together to create an amazing balance of tanginess and the tandoori flavour!

Serving size: 4

Prep and cook time : 30-40 min

INGREDIENTS

  • 500g of chicken thighs and drumsticks without skin ( bone should be intact)

  • 1/2 cup of thick yoghurt ( plain)

  • 1 tbsp of chilli powder

  • 1.5 tbsp of masala or curry powder

  • Salt to taste

  • 1 tsp of cumin

  • 1 tsp of coriander

  • Coriander

  • Lime

METHOD

  1. In a large mixing bowl, add yoghurt, chilli powder, masala, salt, cumin and coriander powder; mix to combine.

  2. Into the bowl, add the chicken; poke the chicken with a fork.

  3. Using your hands mix the chicken well with your hands and let the chicken marinate for 5 min.

  4. Heat up a non-stick skillet at high flame and add the chicken ( you will hear the sizzling sound)

  5. Turn the heat to medium and cook cover for 15 min.

  6. Take the lid off and cook until chicken is fully cooked. ( turn the pieces once a while)

  7. Mix with chopped coriander and serve with some lime!
