Minced chicken open baked sandwich
Hey there lovelies! Iβm here with another easy peasy recipe ! this time, itβs an open sandwich with minced chicken carrots, onions and so forth!
So, the thing to note is that, if you have some leftover baked chicken, carrots or even potatoes.. you can skip the first step and dive right into the second step.
Serving size: 2 people
Prep and cook time: 30-40 min ( including the first step)
INGREDIENTS
1 chicken breast cut into cubes, poked with a fork and marinated with salt, pepper and garlic granules.
3 carrots chopped; make sure to toss them along with the chicken.
1/2 large onion
3 green chillies
1/2 tbsp of fat-free mayo ( or any dressing you like )
salt and pepper
2 slices of cheese
4 slices of wheat bread
METHOD
Pre-heat the oven to 180c and bake for about 35 min or until chicken and the carrots are completely cooked.
Let everything cool down
Put the chicken and the carrots along with onions, green chilli and the seasonings to a food processor; mince everything!
Using a spatula, spread the mince mixture, add cheese slices and bake for a further 5 min!
