Honey-BBQ pulled chicken

Honey-BBQ pulled chicken

Try this tender pulled chicken with homemade honey- BBQ like sauce! I mean it just melts away in your mouth!

You can use this as a filling to a wrap or a sandwich or even pasta !!!

Now, the seasonings and the quantities of ingredients I give are for my taste buds. Please feel free to change up and experiment with your own quantities.

Prep and cook time: 35 min

INGREDIENTS

  • 500 g of tender chicken breast ( tender chicken breast will work well with this recipe) cut into cubes

  • 1 large white onion

  • 1 tsp of apple cider vinegar

  • 1.5 tbsp tsp honey

  • 1 tbsp of mustard dressing ( less if you like less mustardy)

  • 2 tsp smoked paprika or red chilli powder

  • 3 cloves of garlic finely chopped

  • 1 tsp of ground pepper

  • 2 tsp of turmeric

  • Pinch of salt

  • Few sprays of olive oil

  • 1 tbsp sugar-free ketchup

METHOD

  • In a pan, add cubed chicken breast, water, salt and turmeric; boil until chicken is completely cooked ( close the lid).

  • While the chicken is cooking, slice the onions finely and chop the garlic.

  • In a skillet, add few sprays of olive oil; add onions, garlic, paprika, pepper, honey and apple cider vinegar.

  • Caramelize the onions until the red onions are brown and tender.

  • Add mustard dressing and the ketchup to the onion mixture and mix well; cook for 2 min!

  • Once the chicken is completely cooked, use a fork and shred the chicken to thin pieces!

  • Add the chicken to the sauce and mix to combine well!

  • Let the chicken marinate in the sauce we made for about 15 min before you serve!
