Tabbouleh
Simple refreshing, tabbouleh.. I am honestly addicted to this salad. Every-time I eat this, I feel healthy and energetic and the mint in the salad definitely reduces my sugar cravings!

INGREDIENTS
2 cups of finely chopped parsley
1 cup of finely chopped mint
1/2 onion finely chopped
1 tomato finely chopped
1/2 cup freshly grated coconut
1/2 cup cooked couscous
Juice of 1/2 lime
Pinch of salt
METHOD
In a medium size bowl, add all ingredients except the lime juice. Toss well.
Add lemon juice just before you serve, otherwise it may get soggy.
