Sri Lankan STYLE ICED COFFE- HEALTHY VERSION
One main thing I look forward to when I visit Sri Lanka is to try out a traditional iced coffee! It's creamy, aromatic and delicious, however, as you may have guessed its not the healthiest thing to be honest as it has white sugar plus condensed milk ! so quite calorically dense to be frank. As my page is all about healthifying recipes, I have given this a go. I have come up with a delicious Sri Lanka iced coffee recipe so that we all can enjoy without being too conscious about the empty calories. Now, the main thing about this coffee is that you can adapt the creaminess of the coffee by adding more water or more milk to get the correct consistency of choice. This is the way I like my iced coffee. One more thing I forgot to mention is that we Lankans add brandy to this iced coffee! however, I have not added this as an ingredient but feel free to add about 50 ml of brandy if you prefer!

INGREDIENTS
1 cup of milk of choice
1/2 cup of water
1-2 cardomom pods (
1 clove
1 cinnamon stick or 1/2 tsp cinnamon powder
1-1/2 tbsp of Nescafe/instant coffee ( depends on how strong or light you drink your coffee) use 1/2 cup of regular coffee if you dont have instant coffee ( if you do this step eleminate the 1/2 cup of water from above)
1 tsp vanilla extract
1 tbsp of coconut sugar or any sweetener of choice ( also adjust to your liking)

METHOD
If you are using the Nescafe granules and not the puree coffee, you will have to boil the water and add Nescafe to the cup and mix.; set it aside.
In a pot add milk and the rest of the ingredients and bring it to a boil. You will get a fantastic aroma when you boil the milk along with the spices.
Now add the coffee to the spiced milk mixture. If you need more coffee, add more coffee, if you need more sugar, please add more sugar.
Finally, let the mixture cool completely and pour over ice before serving. Coffee will taste its best when it's cold, so ice is a must!
