Stuffed- vegan- wraps

Stuffed- vegan- wraps

There are many many ways of preparing wraps. I mean endless! however, I love to make these wrap triangles once in a while as it reminds me of sri lankan elavalu roti.

Serving size : 3

Prep and cook time: 20 min.

INGREDIENTS

1/2 cup boiled sweet potato

1/2 cup boiled carrots

1 large onion

2 green chillies

2 garlic cloves

1/2 thumb size ginger

1 tbsp of chilli flakes

Few curry leaves

SAlt and pepper

1 tsp cumin ( optional)

2-3 cardamom pods crushed

1 cinnamon sticks

METHOD

In a skillet, add oil spray and once its heated, add garlic, onions, green chilli and sautee until onions are soft and caramalised.

Add cardamom, ginger, curry leaves, cumin, chilli flakes and sautee for further few min until everything is nice and cooked.

Add the boiled and mashed carrots and sweet potato; mix to combine. ( add any other boiled vegetable you prefer, if you are not vegan, add tuna or any other cooked meat of choice)

Add salt and pepper to taste.

Assemble;

Lay the wrap flat, add a generous amount of sweet potato carrot mixture in the middle and fold it to be like a triangle.

Heat up a skillet and place the triangle wrap on it and dry fry it until it gives that golden look.

Flip and do the same for the other side.

These are best served hot and the min you cook them as its crispy in the outside and soft in the inside.
