Crustless onion quiche
Super easy to make but delicious!. I lost the caramalized onions with the sweet and spicy taste which just comes through every bite.
Serving size : 8 inch quiche
Cook time : 20-30 min
INGEDIENTS
1 egg
1.5 cup of almond flour
1/2 cup of milk of choice
2 large onions sliced
2-3 Jalapenos or long green bell peppers
4 garlic cloves
2 tbsp of honey ( adjust for your liking)
1/4 cup chopped green onions
1 tbsp of chilli flakes ( adjust for your liking)
1/4 cup of low fat shredded cheese
1/2 tsp baking powder
Salt and pepper to taste
Olive oil spray
METHOD
In a bowl, mix almond flour, egg, milk baking powder and make a batter ; beat until you create a thick silky smooth batter; set aside.
In a separate bowl, add onions, sliced jalapenos, chopped green onions, garlic, chilli, cheese and rest of the seasonings; mix to combine.
In a skillet, add olive oil ( few spray will be sufficient) put the heat to high.
Add the onion mixture and once you hear the sizzle, let it sautee for 1 min and turn the heat dow n and sautee until onions are caramalized and rest of the ingredients are cooked. ( please taste test add more chilli or salt at this point if you want)
Now, take 8 inch pan, add baking sheet and add the caramalized onion mixture. Pour the almond flour batter evenly.
Pre-heat oven to 180c and bake for 20 min until a toothpick comes clean.
