Spicy shredded chicken

Spicy shredded chicken

Hi guys, this shredded chicken is made to perfection, with the right amount of moisture which can be used in salads, wraps or sandwiches! great meal prep idea. Its spicy, its juicy and its healthy people !!!

Serving size : 4 portions

Prep and cook time : 45 min

INGDREDIENTS

  • 300G of chicken thighs, without bone or skin

  • 1 roasted pepper

  • 1/2 red onion

  • Minced garlic ( 2 cloves)

  • 1/2 of lime juice

  • 2 tsp viniger

  • Sea salt to taste

  • 1 tbsp honey

  • 1 tbsp chilli flakes

  • Pepper to tast

  • 2 tsp garlic powder

METHOD

Pre heat oven to 180c

  • Cut the chicken thighs in to smaller pieces and set it aside in a large bowl.

  • In a pan, add all the ingredients except for the chicken and honey.

  • Cook everything until onions are soft ( about 6-7 min)

  • Now, add the honey, taste test. If you need more salt or chillies please add them now.

  • Using a food processor ( not a blender) mince up mixture to create a paste.

  • Add the paste to the chicken and using your hand mix well to coat every inch of the chicken.

  • Set the marinated chicken aside

  • Take a large foil and add the chicken mix, cover the chicken by folding the foil. No air should get to the chicken.

  • Now, bake the chicken for 30-35 min or more until the chicken is cooked.

  • Take the chicken out and shred it using a fork !
