Mushroom Barley risotto

Ingredients

  • 1/2 cup raw barley soaked overnight in water

  • 1 cup of chicken or vegetable broth

  • few sprigs of rosemary

  • 2-3 garlic cloves minced

  • 3 tbsp of milk of choice

  • Few sprays of oil

  • 2 cups of chopped mushroom

  • Salt and pepper to taste

Method

  • Boil the soaked barley using chicken or vegetable broth and set aside.

  • In a skillet, add few sprays of olive oil, when the oil is heated, add garlic and rosemary followed by the mushrooms.

  • Sautee until mushrooms are tender, add 3 tbsp of milk, salt and pepper to taste.

  • Cover the mushrooms and leave it to cook completely.

  • Add cooked barley and cover for further 5 min !

  • Enjoy this simple yet satisfying dish !
