Mushroom Barley risotto
Ingredients
1/2 cup raw barley soaked overnight in water
1 cup of chicken or vegetable broth
few sprigs of rosemary
2-3 garlic cloves minced
3 tbsp of milk of choice
Few sprays of oil
2 cups of chopped mushroom
Salt and pepper to taste
Method
Boil the soaked barley using chicken or vegetable broth and set aside.
In a skillet, add few sprays of olive oil, when the oil is heated, add garlic and rosemary followed by the mushrooms.
Sautee until mushrooms are tender, add 3 tbsp of milk, salt and pepper to taste.
Cover the mushrooms and leave it to cook completely.
Add cooked barley and cover for further 5 min !
