Spicy fajita pancakes

INGREDIENTS
Pancakes
1 cup of rolled oats
1/4th cup almond flour
2 eggs
1 tsp baking powder
1/2 cup milk
2 tbsp Greek yogurt
Fajita mix
1 tbsp Mexican spices
1 cup of onion chopped
1/2 tbsp honey
2 Green chillies
1 fillet of salmons
2 minced garlic cloves
Pinch of Saly
1 chopped tomatoes
2 green bell peppers sliced
Coriander leaves to top
1 lime
Few sprays of olive oil
METHOD
Mix oat flour, almond flour, pinch of salt and baking powder. Sieve through to get a fine textured flour.
In a separate bowl, beat the eggs, yoghurt and milk.
Add the wet ingredients to dry ingredients and beat one more time to get a fluffy pancake mixture.
In a skillet, add few sprays of olive oil , sautΓ© onions, minced garlic along with the honey and the Mexican spices.
Once the onion caramelises, add bell pepper, tomato, Mexican spices and salmon.
Cook until salmon is fully cooked, make sure to do this in low-medium flame as we donβt want the onions to burn more.
Now add half of the salmon fajita mix in to the pancake mixture and mix well.
Make the pancakes, top each pancakes with the remaining fajita mixture.
Now, if you guys are vegan or doesnβt like salmon, you can substitute this for shredded chicken breast or simply eliminate it.
You might have to add flax eggs instead of the normal eggs if you want pancakes to be vegan too!
