Flourless spicy corn waffle kebabs
Sooo.. here I am with yet another unique healthy recipe. You can eat these as a snack or even as a light meal.
Spicy, savoury delicious corn waffles are a hit in my family !
Serving size : 3 waffles
Prep and cook time : 15 min
INGREDIENTS
1/2 sweet corn
1/3 cup oat flour
1/3 cup almond flour
1 minced onion
1 tsp garlic or onion powder
2 green chillies, green chillies
1 tsp baking powder
2 heaping tbsp of greek yoghurt
1 egg
Pinch of salt
water ( depends on how thick or thin you want your waffles)- I did not add water at all as I wanted them thick.
METHOD
Mix oat flour, almond flour, garlic powder, baking powder and pinch of salt.; Sieve through to get a fine flour. (TIP: you can store this in a glass air-tight container for more than 2 weeks)
In a bowl, add greek yoghurt and the egg and beat until it creates a creamy texture.
Add chopped green chillies, minced onions to the greek yoghurt egg mixture and mix well.
Now pour in the mixture to the dry ingredient mixture and mix well.
Add water to get a thinner batter or leave it as it is for a thick batter.
Heat up a waffle iron and make the waffles.
Cut them up to cube sized portions and make kebabs!
