Spicy crepes
I’m a huge crepe fan, but given my Sri Lankan roots, at times I like my crepes to be spicy ! well why not? right. Give this lentil crepe recipe a try and let me know how you like it !
You can use any toppings you want! I used a spicy chicken minced recipe which I have posted below.
Serving size : 3 large crepes
Prep and cook time: 20 Min
INGREDIENTS
CREPES
1/3 cup red lentils
1/3 cup oat flour
2 cups of water ( a bit more liquids if you want it thinner)
2 tsp cumin seeds
1/2 tsp baking powder
Salt
1/2 tsp chilli flakes
TOPPING
1 cup chicken mince
1/2 onion mince
2-3 garlic cloves minced
2 Jalapenos
4 tbsp of shredded cheese
Few Sprays of olive oil
METHOD
Crepe
Soak red lentils in 1 cup of water for 15 min.
Blend soaked lentils, oats with the 2 cups of water until it creates a creamy texture.
Sieve the mixture to get rid of the clumps.
Add cumin, baking powder, salt, chilli flakes and give it a mix.
See if you need more water to create a thinner crepe batter.
Add more water if you want your crepes thin.
Heat up a skillet and make the crepes!
Topping
Sauté all the ingredients except for the cheese until chicken is fully cooked.
Top the crepes with the chicken topping and add shredded cheese. Bake for 2 min in the oven until the cheese melts!
Do this just before you serve your crepes!
