healthy Cream of butternut squash
Cold winter days calls for a soul warming soup! this is so quick to make just like my other recipes and requires surprisingly few ingredients!
You do require a high speed blender and a sieve to get a silky smooth creamy texture!
Ingredients
2 cups of chopped butternut squash peeled
Few chopped sprigs of chives
1/3 cup of chopped leaks or spring onions
Salt and pepper to taste
1 cup of milk of choice
2 tbsp of coconut cream
1/2 cup of vegetable or chicken stock
1 tsp of garlic powder
1/2 tbsp of olive oil
Method
Add olive oil in a pot on medium heat, add chives, squash and the spring onions.
Sautee until butternut squash is tender, add garlic powder, salt and keep sautΓ©ing for further 10 min.
Add milk, stock and coconut cream; bring it to a boil.
Cover with a lid and cook until butternut squash is fully cooked.
Blend the soup and sieve through to get a creamy texture ! thatβs it guys !
