High-protein warm lentil salmon salad

Hi lovely people! have you guys started eating healthy in 2020 yet? if not, this is a great meal to have during lunch time without any guilt what so ever.

This is high in protein, low in carbs and has healthy fats !

Ingredients

Makes 2 portions

Method

  • In a food processor, add coconut milk, water, chilli flakes, Minced garlic, baby tomatoes, green chilli and the rest of the seasonings until it creates a smooth paste.

  • Cut the salmon to small pieces and mix in to the coconut, chilli paste ; rest for 15 min.

  • In a skillet, add the salmon coconut mixture; cover and cook until salmon is fully done.

  • Add the cooked lentils and the fresh coconut and mix well.

  • Taste test and add any seasonings of choice.

  • Add freshly chopped spinach before you eat !
