High-protein warm lentil salmon salad
Hi lovely people! have you guys started eating healthy in 2020 yet? if not, this is a great meal to have during lunch time without any guilt what so ever.
This is high in protein, low in carbs and has healthy fats !
Ingredients
Makes 2 portions
1 cup of green lentils or any lentils of choice, soaked overnight and boiled
1 green chilli
3 tbsp of coconut milk ( link to purchase -buy whole foods coconut milk)
2 tbsp of fresh coconut shredded ( link to purchase- sainsburyβs )
4 sweet baby tomatoes
240g of salmon
Sea salt and pepper
1 tbsp of chilli flakes
1 cup of spinach shredded
Minced garlic
4 tbsp of water
Method
In a food processor, add coconut milk, water, chilli flakes, Minced garlic, baby tomatoes, green chilli and the rest of the seasonings until it creates a smooth paste.
Cut the salmon to small pieces and mix in to the coconut, chilli paste ; rest for 15 min.
In a skillet, add the salmon coconut mixture; cover and cook until salmon is fully done.
Add the cooked lentils and the fresh coconut and mix well.
Taste test and add any seasonings of choice.
Add freshly chopped spinach before you eat !
