Chilli lime Chickpeas
Hi guys! I thought I would do an easy recipe today with the little we have in the kitchen these days. This tangy chilli dish makes my mouth water every time i think about it!. don't forget this is so aromatic and nutritious as well.
Serving size: 2
Prep and cook time : 20-25min
INGREDIENTS
1 can of chickpeas or 125g of dry chickpeas
1 cup of chopped cilantro or coriander leaves
1/2 bunch of spring onions
1/2 red onion
1 garlic clove
1 green chilli
1 tsp cumin
Pinch of salt
2 tbsp sriracha or any type of a chilli sauce you have in hand
1/2 lime - juiced
Olive oil spray
METHOD
If you have dry chickpeas, you have to soak them overnight and boil them until soft. If you have canned chickpeas, you have to drain them and set aside for the moment.
Add all the ingredients except the chickpeas and the lime juice to a food processor.
Process it once or twice to get a fine mix. We want all the leaves, onions and the rest of the ingredients to be chopped extra fine so when we make the sauce, you will not feel chunks of anything.
Now, in a skillet add few sprays of olive oil, once the oil is heated, add the mix and let it cook over medium heat; keep stirring.
The onion will change in colour, and the sauce will thicken. You can taste test and add more chilli sauce or salt at this point. Now, add the chickpeas and the lime juice; toss well. Taste test! That's all!
