Hey lovelies ! I always try to test my recipes many times to get the best ever possible result and then I post the recipe and share with you all. It takes few attempts and at times I do give up ! However, this is something I am so proud about as it took few trials, i added egg for the batter, dindt work, i then added cornflour , didnt work but now i have nailed it and i cannot not stop eating these crunchy chicken nuggets.

Try and make these at home and let me know how you like these! please leave a comment below.

TIP : if you are making this for your children, you can eliminate the chilli powder.

Serving size: 20 mini nuggets

Prep and cook time: 30 min

INGREDIENTS

250 g of chicken breast skin-less

2 tsp of chilli powder

3 tsp of pepper crushed

Salt to taste

1/2 cup oat flour or whole wheat flour

1/4 cup milk of choice

1 cup of crushed plain cornflakes or panko crumbs

METHOD

  1. First cut the chicken breast into cubes and dab with a tissue to get rid of the moisture.

  2. Poke the chicken gently, add chilli powder and make sure to mix and combine well to coat the chicken pieces.

  3. In a small bowl, add oat flour, salt and pepper; mix to combine.

  4. Dip the chicken pieces in the mixture and dip it in the bowl of corn flakes to cover each and every corner of the chicken pieces.

  5. Take a oven-proof tray and add a baking sheet; spray with oil of choice.

  6. Add the pieces few inches apart. Spray with a coat of oil.

  7. Preheat the oven to 180c and bake these for about 20-25 min. I would say, please keep an eye not to burn the corn flakes.
