Spicy sri lankan style scrambled eggs ( seen sambola eggs)
Ayubowan my friends! I made these scrambled eggs today, and I was quite happy with the recipe. I thought of sharing this scrambled eggs with a Sri Lankan twist as I'm quite sure many of you guys will like this as well! Scrambled eggs can be quite dull isn't it? But not this recipe for sure! So, let's get into the recipe!

Prep and cook time 10-15 min
INGREDIENTS
2 eggs and 2 egg whites 1 large
1 large red onion
2 green chillies
2 cloves
1 cinnamon stick crushed
1 tsp of curry powder
2 tsp of honey
1 tsp of chilli flakes
Pinch of salt
Few sprays of olive oil
METHOD
Cut the onions finely along with the green chillies; put them in a bowl. Add honey, curry powder, chilli flakes, salt, cinnamon and cloves; mix to combine.
In a skillet, add 5 olive oil sprays on high heat. Add the onion mixture and saute until onions are caramelized and have changed colour to a light golden colour.
In a bowl, whisk the eggs and pour half the mixture to the onion mixture and keep scrambling; do not let the eggs get dry.
Add the rest and keep scrambling the eggs; folding using your spatula will get the scrambled eggs fluffy. There you have it! Taste test and add more salt if needed! This can be stuffed in a sandwich with a slice of cheese or add on a wheat wrap and oven-baked for few mins until the cheese melts.
I have added this on to my oat chapati along with a slice of cheese and then oven baked for 5 min until the cheese melts! it was just tooooo good.
