Coconut Brussels sprouts curry

INGREDIENTS
250g Brussels sprouts cut in half
1 large onion sliced
2-3 green chillies
1/2 cup coconut milk
1/2 cup water
1/2 tsp turmeric powder
2 tsp curry powder
1 tbsp chilli flakes
1 tsp fenugreek seeds
Handful of karapincha or curry leaves
Pinch of salt
Bit of lime juice ( optional)
METHOD
In a clay pot add everything except coconut milk and cook the Brussels sprouts.
Once the Brussels sprouts are tender, add in the coconut milk and bring it to a boil !
Thats it !
Enjoy with a side of brown rice.
