Vegan- Chocolate Jello
Hi everyone! this pudding/jello can be made non-vegan by simple swapping the coconut milk to regular milk. However, the combination for coconut and chocolate is absolutely divine and I highly recommend you try!

INGREDIENTS
1 can of pure coconut milk
2-3 tbsp of coconut sugar or any type of sugar you prefer
3 tsp of vegan gelatine powder.
1 tsp vanilla bean paste.
1/4 cup melted dark chocolate or sugar-free chocolate
Pinch of salt
METHOD
In a small saucepan, whisk together the coconut milk with the powdered gelatin. Allow to sit for 5 minutes to allow the gelatin to "bloom."
Add in the vanilla extract, then gently heat the mixture over medium heat, whisking well to help the gelatin dissolve; please do not let the mixture boil.
Once the gelatin has completely dissolved, remove from the heat and stir in the coconut sugar and the melted chocolate.
Now, whisk to combine everything and sieve the mixture to get rid of the lumps.
Pour the mixture into your desired moults or one big container; refrigerate overnight.
