Moist sweet bread
Hi everyone! so after I did the vegan recipe I wanted to try out a non-vegan version of the sweet bread. Needless to say that I love this version of the bread as well and it’s just too good. I mean I love creating these recipes as I know exactly what goes in these recipes rather than buying store-bought packaged products gods knows when they have made it!
Serving size : Small loaf pan
Prep and cook time: 25- 30 min
INGREDIENTS
1 cup of oat flour
1/3 rd cup of almond flour or whole-wheat flour
1 egg
2 tbsp of thick greek yoghurt
1 tsp of baking powder
pinch of salt
1/4th cup of coconut sugar or set honey ( honey will make it slightly densed)
METHOD
Beat the Egg whites until you get thick peaks and set aside.
breat the egg yolk along with coconut sugar, and greek yoghurt until it creames well.
Mix both types of flour and sift for few times to get a soft and fluffy textured flour. This step is important as naturally oat flour is quite densed.
Now, mix the dry ingredients with the wet ingredients and beat for few min until everything is combined well and creates a thick creamy batter.
Now using a spatula, add half egg white at a time and mix into the batter; this will be so fluffy in texture.
Pour the batter to a loaf pan covered with a baking sheet and bake for 25 min or 30 ( depending on if you like it moist or a bit hard) in a pre-heated oven at 180c.
