Coffee crepes for coffee lovers
Who doesn’t like to have a warm coffee crepe in the morning?
I love the coffee smell in the morning and It just wakes me up like no other ! So why not combine my favourite coffee with the love for crepes and make coffee crepes ! that was my idea behind the recipe.
Serving : about 3 crepes
INGREDIENTS
1/2 cup oat flour ( blended oats)
1/2 cup almond or whole wheat flour
1 tsp baking powder
1 egg
1 cup of almond or semi-skim milk
1 tbsp of yoghurt
Pinch of vanilla
1.5 tbsp of honey or maple syrup
3 tsp of instant coffee granules ( more if you need it to be quite bitter, less if you want it less bitter)
Coffee syrup- optional
1/4 th cup of black coffee and coconut sugar ( to your sweetness)
simply caramelise the coconut sugar and add strong coffee to get a thick strong coffee syrup
You can use honey instead as well.
METHOD
Like in my other crepe recipes, I always say; when you make crepes sieving the batter is a must !why? this will give you a smooth crepe batter.
beat the egg, yoghurt, vanilla and honey; set aside
Mix oat flour ( sifted) , wheat or almond flour ( sifted) along with the baking powder.
Now pour wet ingredients to dry ingredients and mix to combine!
Sieve through to get a silky smooth batter.
If you feel this is thick, add more milk!
Simply heat up a pan and make the crepes!
