Coffee banana cake
I have made a similar recipe for my coffee muffins but I have experimented a bit more with the recipe and came up with this easy grab-and go recipe as a pick me up during tea time!
INGREDIENTS
1.5 cups of oats
1 ripe banana
1 tbsp Nescafe granules
1 egg beaten
1/8th cup of raw set honey or coconut sugar
1/4 cup of melted chocolate ( I use the sugar free kind)
Pinch of sea salt
1/ 2 tsp of baking powder
1 tbsp chia seeds
1 tsp of vanilla extract
PRE-HEAT oven to 180c
METHOD
Simply put all ingredients in a food processor and process until it creates a batter. Taste test, if you need a bit more coconut sugar, please feel free to add.
Set aside for 15 min, until the batter gets a bit thick.
Pour the batter to a oven -safe loaf pan
Bake it at 180c for 30-35 min or until the banana cake is fully cooked.
