Chia-pudding Sri Lankan style
This chia pudding mimics the Sri Lankan sago pudding, instead of sago I used chia seeds as that’s what I had in hand.
Serving size: 2 small pudding cups
Prep and cook time: 10 min
INGREDIENTS
1 cup pure- thick coconut milk
1/4th cup of chia seeds
1 tbsp of jaggery or coconut sugar ( or what eve sugar you have, please adjust the quantity to your liking, if you want this to be sweeter add more if less sweet add less sugar)
1/2 tsp of cardamom powder or 3- crushed cardamoms
Pinch of nutmeg
Pinch of salt
METHOD
In a pot, add coconut milk, coconut sugar, cardamom, nutmeg and salt; bring this to a boil.
Take the pot away from the heat.
Add chia seeds and whisk until the pudding thickens.
