Breakfast muffins
Hey healthy souls.. here’s yet another recipe from the healthy Sutra corner to yours ! this time its a quick fix breakfast muffin recipe.. to boost your energy and to start your day with w positive sweet note !
You can make these the day before and leave it in the fridge in an air tight container. Microwave for a min before you eat though !
These are packed with nutrients ! I made 7 mini muffins .. and yes ! you can eat all 7 without any guilt.
Ingredients
1/2 cup fo rolled oats
3 pitted dates ( preferably soaked in water)
1 egg
1/2 tsp of baking powder
Pinch of salt
1 tbsp of chia seeds
1.5 tbsp of raw honey or coconut sugar
6 almonds
1 tbsp desiccated, unsweetened coconut
Vanilla extract 1/2 tsp
PRE HEAT OVEN to 180c
Method
Blend the rolled oats, add baking powder and sieve ( not mandatory but this will give you a very smooth flour texture).
Blend the almonds, chia seeds, egg coconut, vanilla extract and dates until it creates a wet batter.
Add the wet batter to oat flour along with a pinch of salt.
Mix well to incorporate everything.
Add the batter to mini muffin tray and bake for 12-15 min !
