stuffed vegetable crepes ( elavalu roti)

This can easily make a wonderful lunch or dinner or even a snack. You can stuff the crepes with any filling of your choice. I have used a spicy sweet potato filling for this recipe. My crepe recipe is in the bottom of the page or you can simply click here for the recipe.

Serving size: 6 stuffed Rotis

Prep and cook time - 40 min

INGREDIENTS FOR FILLING

  • 1/2 cup sweet potato boiled and mashed

  • 1/2 cup carrots boiled and mashed

  • 1 large onion finely chopped

  • 2 green chillies

  • 2 tsp curry powder

  • 1 tsp chilli flakes

  • 1 tbsp garlic paste

  • 1/2 tbsp ginger paste

  • 3-4 cardamom pods crushed

  • 1 cinnamon stick

  • salt to taste

  • pepper to taste

  • Few sprays of olive oil and curry leaves

METHOD

  1. In a skillet, add few olive oil sprays and add ginger garlic paste along with curry leaves and start sauteeing on low heat.

  2. After about a min add onions, chilli flakes, cinnamon stick, cardamom pods and seasonings; sautee in medium heat until onions are browned. You will get an amazing aroma right about now.

  3. Once the onions are completely brown and cooked, add mashed carrots and sweet potato and mix well to combine.

  4. Turn off the heat and taste test. If you need more salt or pepper pls add at this time.

INGREDIENTS FOR CREPES

serving size : 6 large crepes or 12 smaller crepes

  • 1 cup milk of choice

  • 1 cup oat flour

  • 4 tsp greek yoghurt

  • Pinch of salt

  • 1/2 tsp turmeric

  • 1 tsp baking powder

  • 1 egg plus one egg white

METHOD

  1. I blend everything in a high-speed blender and sieve through to get rid of all the lumps and pieces; this will give you a silky-smooth crepe texture.

  2. Heat up a non-stick skillet and pour the batter using a ladle and rotate the pan to get an even crepe shape.

  3. Cover with a lid for 30 seconds

  4. If the edges are bubbling, flip and cover and cook until the crepe is completely done.

Assemble time

  1. In the middle of the crepe, add 1 tbsp of sweet potato mixture and Fold the sides of the crepe inward, as though you’re folding an envelope and now fold both sides and finally the top side inwards over to create a rectangular shape stuffed crepe.

  2. Heat up a skillet and place the folded side bottom and cook the crepe for 30-40 seconds. flip and cook the top then the sides to completely seal. !
