 savoury Lunch crepes

savoury Lunch crepes

Serving size : 3 large crepes

Prep and cook time : 10 -15 min

INGREDIENTS

  • 1/2 cup of rolled oats

  • 1/2 cup milk of choice

  • 2 tsp greek yoghurt

  • Pinch of salt

  • 1/2 tsp turmeric

  • 1/2 tsp baking powder

  • 1 egg

TOPPINGS

  • Chopped tomatoes and green chilli

  • Grated cheese ( optional)

  • Herbs ( optional)

METHOD

  1. Blend the oats to a fine texture and sieve through to get a fine flour-like texture.

  2. Whisk the egg, greek yoghurt, salt, turmeric, baking powder and the milk.

  3. Add the wet ingredients to the oat flour and mix to combine.

  4. Sieve through to get a very thin crepe-like batter.

  5. Heat up a skillet and pour desired amount of batter and rotate the pan to get a even circular shape crepe; add the toppings of choice.

  6. Cover for 30 second, open lid, flip, repeat until crepe is completely cooked !
