savoury Lunch crepes
Serving size : 3 large crepes
Prep and cook time : 10 -15 min
INGREDIENTS
1/2 cup of rolled oats
1/2 cup milk of choice
2 tsp greek yoghurt
Pinch of salt
1/2 tsp turmeric
1/2 tsp baking powder
1 egg
TOPPINGS
Chopped tomatoes and green chilli
Grated cheese ( optional)
Herbs ( optional)
METHOD
Blend the oats to a fine texture and sieve through to get a fine flour-like texture.
Whisk the egg, greek yoghurt, salt, turmeric, baking powder and the milk.
Add the wet ingredients to the oat flour and mix to combine.
Sieve through to get a very thin crepe-like batter.
Heat up a skillet and pour desired amount of batter and rotate the pan to get a even circular shape crepe; add the toppings of choice.
Cover for 30 second, open lid, flip, repeat until crepe is completely cooked !
