healthy Thai meatballs
A few weeks ago, I posted a Thai style chicken burger variation and I have used the same recipe for this. The only change is that I have added these spicy Thai balls in a very aromatic onion fry to take the meatballs to another level.
So shall we make it then?
Serving size : 3 people
Prep and cook time: 30 min
INGREDIENTS ( patty)
500G of chicken breast
1/2 onion
few green chillies
2-3 tsp of garlic granules
1/2 chopped lemongrass
Salt and pepper to taste
3 tbsp water
INGREDIENTS ( onion fry)
1 large onion sliced
2 long sprigs of lemongrass
few coriander leaves
3 tbsp of soy sauce
1 tbsp of oyster sauce
3 red bird eye chillies
3 cloves of chopped garlic
1 tbsp raw honey
1 tbsp crushed ginger
METHOD
Blend everything from the ingredients for the patty until it creates a thick mixture and makes balls. ( do not add water).
Once the balls are made, add few olive oil sprays to a non-stick skillet and add the meatballs. Fry them until lightly golden on the bottom.
Add 3 tbsp of water and cover with a lid.
Cook until everything is completely cooked.
In a skillet, add few sprays of olive oil, add ginger, garlic, onions and lemongrass and saute until onions are lightly brown ( make sure not to let the garlic burn.)
Add honey, red chillies and keep sauteeing until onion is caramelized with the honey.
Finally, add soy sauce and oyster sauce and keep sauteing until it creates a thick onion gravy.
Taste test and adjust the taste to your liking.
Add the chicken meatballs and mix until the meatballs are nicely incorporated.
