Healthy couscous salad
Salads are never boring guys! This is a summer fresh, delicious and a nutritious salad made with wholesome ingredients.

Prep and cook time : 10 min
INGREDIENTS
1/2 cup dry couscous
1 cup chicken or vegetable stock
2 cups of lettuce chopped
1 tomato slices
1 cucumber slices
1/2 cup chickpeas boiled or from a can
1 cup green peas
1 egg
Salt and pepper to taste
1 TBSP of greek yoghurt ( optional)

METHOD
In a bowl, add dry couscous and add boiling hot stock; cover and set aside.
In a non-stick skillet, spray with olive oil, add green peas and saute until green peas are soft and tender.
Add a beaten egg and scramble in the same skillet.
After about 10-15 min, the dry couscous will bloom and will be completely fluffed up and cooked.
Now, add the cooked couscous to the green pea and scrambled egg mixture and sautee and mix to combine for about 2 min. Let the mixture cool down.
In a salad bowl, add chopped lettuce, chickpeas, sliced tomatoes, sliced cucumber and the cooked couscous.
Whip the yoghurt with a whisk and add a dollop on the salad.
Add salt and pepper to taste and some lime juice.
