Roasted Pickled peppers
This is a good pickle recipe to have under your belt, if you buy store bought once, and read the ingredients they can be a bit scary as there are so many ingredients that I don’t recognise ! and sometimes , when we buy a huge jar, we never get to finish it most of the time ! so end up throwing away anyway !
This recipe will make about a cup of pickles with ingredients that you can easily find at home, and you can leave this up to two weeks and consume as and when! I love to mix a bit of pickle with some cheese and then spread over some wheat bread! Alternatively you can use this pickle with wraps, salads anything you like !
INGREDIENTS
5 large sweet red peppers or Italian sweet peppers
1/2 cup of apple cider vinegar
4 tbsp thick set honey
Pinch of salt
1/2. tbsp chilli flakes ( optional)
METHOD
Pre-heat oven to 180C
Wash the peppers and slice them side ways
Place them in a flat baking tray and roast them for 15 min! They will wilt and have black edges.
Once cooled, please chop them in to small pieces.
In a glass jar, add vinegar, honey, salt and chilli flakes; give it a mix
Add the chopped peppers to the vinegar and mix well
Close the glass jar and keep it in the refrigerator
Pickle will taste so good after about a day !
