Mild Cucumber curry
Ayubowan yet again my friends, I'm here with yet another easy recipe! This time I am using cucumber! Alternatively, you can use marrow as well.

Cook and prep time : 20-25 min
INGREDIENTS
5 large cucumbers peeled and cut into cubes
2 green chillies
1/5 cup of coconut milk
Bunch of curry leaves
1/2 tsp of turmeric powder
1/2 tsp fenugreek seeds
1 yellow onion sliced
1/2 tsp curry powder ( optional)
Sea salt to taste
METHOD
Simply put everything in a large pot and cover until cucumber is cooked.
Taste test and add more curry powder or salt
Simple as that ! this does not take much time at all but trust me you will enjoy this mellow vegan curry so much. I love to have this with a bit of bulgar wheat on the side.
