Pre-heat oven 180C

Prep time: 5 Min

Cook time: 25 Min

INGREDIENTS

  • 1 cup of almond flour

  • 1 cup of dates soaked in 1 cup of black tea

  • 1/3 cup coconut sugar plus 1 tbsp coconut sugar for dusting

  • 1/4 cup greek yoghurt

  • 2 eggs

  • 1 tbsp of honey

  • Few drops of vanilla extract

  • 1/2 tsp of baking powder

  • Pinch of salt

METHOD

  • Beat the coconut sugar, greek yoghurt and eggs until you get a creamy thick texture.

  • Add honey, vanilla extract and pinch of salt and whisk or beat to incorporate everything well.

  • Now add almond flour and baking powder mix and add the wet ingredients to the dry ingredients.

  • Now drain the soaked dates from the tea mixture and chop them to smaller pieces; add them to the batter.

  • Pour the batter to a baking tray and dust with the remaining coconut sugar

  • Bake the mixture for 25-30 min!
