Baked Lazy eggplant

Baked Lazy eggplant

Eggplant is such an underrated vegetable. It is quite tasteless but, when made it this way, you will fall in love with eggplants for sure!

Serving size: 3-4

Prep and cook time: 20-30 min

INGREDIENTS

  1. 1 large eggplant cut lengthwise ( make sure the slices are thin but not too thin, this should cut about 6 slices.

  2. 1/3 cup of tomato sauce ( or a bit more if you want this saucy)

  3. 3 cloves of garlic finely chopped

  4. 1 chicken breast minced

  5. 1/4 cup of low-fat cheese

  6. 1/3 cup spring onions

  7. 1/3 of a medium-sized finely chopped red onions

  8. 1/2 tbsp of chilli flakes

  9. Pinch of salt

  10. Few sprays of olive oil

METHOD

  1. Poke the eggplant slices with a fork; Heat up a skillet, and cook the slices both sides for 2-3 min each.

  2. In another skillet, add few sprays of olive oil, add spring onions, garlic, chicken, chilli flakes, salt and let the mixed chicken cook completely. ( taste test and add salt and chilli for your liking)

  3. Add a baking sheet to an oven-proof pan and lay 3 slices of eggplant; spread sauce, top with minced chicken mixture, chopped red onions and add another layer of eggplants on the top.

  4. Finally, add another layer of sauce on the top, and the cheese.

  5. Spray the whole thing with some olive oil

  6. Bake it at 180c for 20-30 min while checking to see if the eggplant is fully cooked. ( time will depend on how much you have cooked the eggplants on the stove in the beginning of the recipe)
